Avocado Pops — Cooking with Gia and Olive

It's green, red and icy—perfect for a Christmas treat down under!

Preparation Time: 10 Minutes

Fridge Time: Overnight

Serves: 4–6 Popsicles


  • 1 ripe medium avocado
  • 1 cup fresh baby spinach
  • 400 ml coconut milk
  • ¼ cup fresh lime juice
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • ½ cup strawberries, chopped


  1. Blend all ingredients, except strawberries, in a blender until smooth.
  2. Add chopped strawberries into paddle pop moulds, then pour in avocado mixture.
  3. Freeze until firm, preferably overnight.
