Peach Muffins — Cooking with Gia and Olive

Flourless and eggless, these muffins are packed full of flavour.

Preparation Time: 15 Minutes

Cooking Time: 30–35 Minutes

Serves: 12 muffins


  • 6 ripe bananas
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ cup walnuts, crushed
  • 1 cup canned peaches, chopped
  • 3½ cups rolled oats


  1. Preheat oven to 180oC (fan-forced).
  2. Mash bananas in a mixing bowl until smooth.
  3. Stir in remaining ingredients (except oats).
  4. Add oats and stir until mixed through.
  5. Spoon into muffin pan and bake for 30–35 minutes.
