Summer Rice Salad — Cooking with Gia and Olive

This fresh dish is perfect for weekday dinners and summer get-togethers.

  • 2 cups cooked brown rice
  • 1 red apple, cored and chopped
  • 1 red onion, finely chopped
  • 1 red capsicum, diced
  • 1/3 cup raisins
  • 1/3 cup parsley, chopped


  • ¼ cup olive oil
  • 1/3 cup apple cider
  • 2 tsp maple syrup
  • 1 garlic clove, crushed
  • Salt and pepper to taste


  1. Add rice, apple, onion, capsicum, raisins and parsley into a large bowl. Toss gently to combine.
  2. To make the dressing, combine dressing ingredients in a screw-top jar. Shake well to combine.
